Healthy Nut Butter Chocolate Chip Cookie Dough Bites

doughballs3I must admit to you all – I’ve really jumped off the wagon last week, in terms of eating healthy. Well…perhaps, flown off of it would be a better description.

My weakness? Sweets. Anything sugar or candy-related. And as much as I’m inspired by ladies like those over at Sugar-Free September and Stacie over at Journey to the Stage, I get cravings. Like, a lot. As soon as I wake up, my brain zones in on something, and usually that something is sugar.

To combat this, I’ve tried to make healthier choices, and come up with creative ways around my cravings. This concoction is my latest example of something that could be really terrible for me, but is actually made relatively healthy. It gets me through dessert cravings and helps me, you know, function as a a normal human being.

You will need:

  • 1 tbsp nut butter
  • 2-3 tbsp non-dairy milk
  • 2 tbsp coconut flour
  • 1 tbsp semi-sweet chocolate chips (Enjoy Life brand, or otherwise)

Put the nut butter and 1 tbsp of the non-dairy milk into a microwave safe container; heat it until it is easily stirred together (I usually do about 20 seconds). Mix in the coconut flour, and add the non-dairy milk as necessary to get the dough to a more dough-like consistency. Mix in the chocolate chips with your hands, or your spoon, whatever you like. Using your hands, mold the dough into 4 teaspoon-sized balls. You have two options at this point: stick them in the fridge to harden a bit, or pop them in your mouth at that moment to enjoy promptly. I’m going to let you guess which one I chose.
