When I was little, my absolute favourite go-to ice cream was mint chocolate chip. Time and again, when other kids would walk out with Rocky Road, Cookies’n’Cream, or the ever-popular Bubblegum, I would pick my tried and true green friend. It was always good, always satisfying, and always had just the right amount of chip. It indulged my chocolate craving while seeming to be ‘refreshing’. Plus, I liked the colour.
So, it wasn’t out of left field when the other day I started craving mint chocolate chip ice cream. Badly (on that note, does anyone else notice that I crave things constantly? What is my life going to look like if I ever get pregnant? ….poor, poor people in my life at that time). I didn’t have any lying around the house, so, naturally, I improvised.
The difference? This one is healthy. That’s right, I said it: healthy. And for those of you who use green food colouring, don’t be ridiculous! Toss some spinach in that bad boy! You should know how I feel about the smugness of drinking an entire salad before lunch! It’s brilliant…and tasteless! So go ahead and indulge in this bit of awesome. I certainly did. Perhaps more than once…
You will need:
- 1 banana
- 1.5 cups almond or coconut milk
- 1 cup organic baby spinach
- 1-2 tbsp cacao nibs
- 1/8 tsp. mint extract
