Chunky Rainbow Salsa


Now, I don’t know about you, but I love salsa. The chunkier, the better. And the more cilantro, the better, as far as I’m concerned. When I came across this recipe in Kimberly Snyder’s The Beauty Detox Solution, I was intrigued. Thrilled, even. It has all of the crunch and flavours I love – minus any bad extra sodium that you can find in the store-bought stuff. This is a particularly important component for me, as my parents both have high blood pressure; keeping sodium down has been a way of life for me for a long, long time.


salsa2But enough about family health history; back to the good stuff. This salsa is hearty and satisfying, with the cayenne pepper lending it just enough of a ‘kick’. The cilantro is just lovely to me; I could eat piles of anything that complements that herb. And I wouldn’t feel terrible about eating piles of this. If I really wanted to get my veggie serving of the day, I could just plop a cup full of this in front of myself along with some veggie sticks, and dip and munch away. And I’d enjoy every bite.

You will need:

  • 4 large ripe tomatoes
  • 1 large sweet onion
  • 1 yellow bell pepper
  • 1 red or orange bell pepper
  • 2 cups chopped cilantro
  • 2 tbsp lemon juice
  • 1/2 tsp black ground pepper
  • 1/2 tsp sea salt
  • cayenne pepper to taste

Chop all those veggies up and throw them into a large bowl. Add the dressings until you’re satisfied with the finished flavour. Enjoy, enjoy, enjoy!!
