Buckwheat Banana Chocolate Chip Pancakes & Valentine’s Day Well Spent


I hope everyone enjoyed their Hallmark-created special day from yesterday – as cheesy as I know it is, I absolutely love it. I love the idea of expressing gratitude to those you care about. I love to make homemade, terribly funny Valentine’s cards, and drop off little parcels of homemade baked goods to people who would like a smile. Also, breakfast in bed doesn’t hurt – which is why I made these Buckwheat Banana Chocolate Chip Pancakes. I even managed to make one of them look like a heart…I never said my patience or abilities in making pancakes look like shapes was very good. I spent my Valentine’s Day celebrating ‘Galentine’s Day’ a la Leslie Knope from Parks and Recreation, with two very special ladies (one of whom is getting married this coming October, and has asked me to be in the wedding party!). We played charades, ate good food, drank some brews, and had a hella good time. Afterwards, I surprised Joe with a ride home from work (and a cookie or two) after a particularly long shift. That’s really what V-Day is all about, to me. How did you spend your day? Or, what’s your favourite excuse to eat pancakes?

        Yes, you should come over for breakfast – funny thing, I actually had a dream the other day that I was visiting New York (it ended up being London, weirdly enough) and YOU were our brief tour guide! Bizarre! Although perhaps not that bizarre if you knew how crazy and varied my dreams are on a daily basis.

    i took the GALentine’s inspiration from you and gave my management team a lil something to let them know i care about them & their hard work (& since we’re all single ladies, it was in the form of a chocolate man in heart shaped boxers hah!!) AND we went for a drink after work together! yay for celebrating singledom on v-day!
